1 ½ cups chocolate cookie crumbs (or graham crackers)
5 tbsp unsalted butter, melted
2 tbsp granulated sugar
For the Pumpkin Filling:
1 cup pumpkin puree
½ cup brown sugar
2 large eggs
½ tsp salt
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ground ginger
1 tsp vanilla extract
½ cup heavy cream
½ cup dark chocolate, melted
For the Chocolate Ganache:
½ cup heavy cream
4 oz dark chocolate, chopped
Pinch of sea salt

Step 1: Prepare the Crust
Preheat oven to 350°F (175°C).
Mix chocolate cookie crumbs, melted butter, and sugar until combined.
Press mixture into a 9-inch tart pan evenly.
Bake 8–10 minutes. Cool completely.
Step 2: Make the Pumpkin Filling
In a bowl, whisk together pumpkin puree, brown sugar, eggs, salt, cinnamon, nutmeg, ginger, and vanilla.
Stir in heavy cream and melted dark chocolate until smooth.
Pour filling into cooled crust and smooth top.
Step 3: Bake the Tart
Bake at 350°F (175°C) for 30–35 minutes, until the center is set but slightly jiggly.
Let cool to room temperature, then chill for at least 2 hours.
Step 4: Prepare the Ganache
Heat heavy cream until simmering.
Pour over chopped dark chocolate. Let sit 2 minutes, then stir until glossy and smooth.
Pour ganache over chilled tart, spreading evenly. Sprinkle sea salt on top.
Step 5: Serve & Decorate
Garnish with whipped cream, pumpkin seeds, or caramel drizzle if desired. Slice and enjoy!
