For the Sandwich:
4 slices sourdough, brioche, or artisan white bread
4–6 oz Brie, Camembert, Havarti, or Gouda (sliced)
1 small apple (Honeycrisp, Gala, or Fuji), thinly sliced
4 tablespoons cranberry sauce (homemade or canned whole-berry)
1 tablespoon butter, softened
Optional proteins: sliced turkey, chicken, or ham
Optional extras: fresh thyme, honey drizzle, or arugula
For the Optional Apple-Cranberry Sauce (if making fresh):
½ cup cranberries (fresh or frozen)
¼ cup apple, finely diced
2 tablespoons sugar or maple syrup
1–2 tablespoons water
Pinch of cinnamon or nutmeg
Instructions
In a small saucepan, combine cranberries, diced apple, sugar, water, and spices.
Simmer 5–8 minutes until berries burst and sauce thickens. Cool slightly.
Spread a thin layer of cranberry sauce on two slices of bread.
Layer with cheese slices, apple slices, and optional turkey or ham.
Top with the remaining bread slices.
Lightly butter the outside of each sandwich.
Heat a skillet over medium-low.
Cook sandwiches 3–4 minutes per side until the bread is golden and the cheese is melted.
Press gently with a spatula for extra meltiness.
Slice in half and serve warm with extra cranberry sauce, honey drizzle, or fresh herbs if desired.
