Ingredients
1 (9-inch) pre-baked pie shell
2–3 tbsp breadcrumbs (optional)
1 lb fresh asparagus
4–6 large eggs
1 cup whole milk or half-and-half
4–8 oz shredded cheese (e.g., Gruyère or cheddar)
1 tbsp olive oil or melted butter
1 small onion or 2 shallots
1–2 cloves garlic
½ tsp salt
¼ tsp black pepper
Pinch of nutmeg or cayenne pepper
2 oz turkey bacon (cubed and cooked)
dill or thyme (optional)
Instructions
Preheat oven to 375°F
Line pie shell with parchment paper, add weights, and bake 15 minutes
Remove weights, reduce oven to 375°F, and bake crust 5 minutes for a golden base
Sauté onion/shallots in olive oil/butter until translucent (5 minutes)
Add chopped asparagus and minced garlic to sauté for 4 minutes
Egg custard: Whisk eggs with milk, salt, pepper, and herbs in a medium bowl
Layer half the cheese in the warm crust, then add sautéed veggie/asparagus mixture
Pour in egg custard and scatter remaining cheese on top
Bake 35 minutes until top is golden and center still jiggles slightly
Cool 30 minutes before slicing into 6 portions
Notes
Par-baking creates a crisp crust by preventing custard from soggifying the shell
Use in-season asparagus for best texture
Customize with roasted peppers, mushrooms, or spinach
