3 pounds potatoes (Russet or Maris Piper), peeled and chopped

½ cup milk

1 egg
½ cup breadcrumbs
For the Filling:
6 slices bacon, chopped
1 pound ground sausage
1 small onion, finely chopped
2 cloves garlic, minced
½ teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon dried thyme
For Topping:
¼ cup breadcrumbs
2 tablespoons melted butter
¼ cup shredded cheddar cheese

Step 1: Prepare the Potatoes
Boil the chopped potatoes in salted water for about 15–20 minutes until tender. Drain well and mash with butter, milk, salt, and pepper until smooth. Stir in shredded cheese, egg, and breadcrumbs. Set aside.
Step 2: Cook the Filling
In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside. In the same pan, cook the sausage with chopped onion until browned. Add garlic, paprika, thyme, and pepper. Stir in the cooked bacon and cook for another minute. Remove from heat.
Step 3: Assemble the Loaf
Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper. Spread half of the mashed potato mixture on the bottom and press it up the sides slightly to form a shell. Add the bacon and sausage filling in the center. Cover with the remaining mashed potatoes and smooth the top.
Step 4: Add the Topping
Mix breadcrumbs with melted butter and sprinkle over the loaf. Add shredded cheese on top.
Step 5: Bake
Bake for 30–35 minutes until the top is golden and slightly crisp. Let the loaf rest for 10 minutes before slicing.
