Description
A creamy, melt-in-your-mouth dessert made by baking yogurt with sweetened milk or natural sweeteners. Popular in Indian cuisine, baked yogurt has a silky texture similar to cheesecake but is lighter, eggless, and incredibly easy to prepare.
Ingredients
🛒 Ingredients (for 4–6 servings):
For the Classic Version (with condensed milk):
2 cups thick yogurt (hung curd)
1 cup sweetened condensed milk
½ teaspoon cardamom powder (optional)
1 teaspoon vanilla extract (optional)
For the No Condensed Milk Version:
2 cups thick yogurt (hung curd)
½ cup sugar or honey (adjust to taste)
½ cup fresh cream or milk
1 teaspoon vanilla extract
Optional Add-Ins:
½ cup chopped fruits (mango, berries, or apple)
2 tablespoons nuts (almonds, pistachios)
1 tablespoon raisins or dried fruits
Instructions
📝 Instructions:
Step 1: Prepare Yogurt
Strain yogurt using a muslin cloth for 1–2 hours to remove excess whey. This gives a thick, creamy texture.
Step 2: Mix Ingredients
In a bowl, whisk the thick yogurt until smooth. Add condensed milk (or sugar + cream mixture) and mix well until creamy and lump-free. Stir in vanilla or cardamom if using.
Step 3: Add Flavor (Optional)
Fold in chopped fruits or nuts for extra texture and flavor.
Step 4: Bake
Preheat oven to 350°F (180°C). Pour the mixture into ramekins or a baking dish. Place them in a water bath (tray filled with hot water).
Bake for 25–30 minutes until set but slightly jiggly in the center.
Step 5: Chill
Let cool at room temperature, then refrigerate for at least 2–3 hours before serving.
Notes
- Texture Tip: Always use thick yogurt; watery yogurt will result in a runny dessert.
- Healthier Option: Use honey or jaggery instead of sugar.
- Flavor Ideas: Try saffron, rose water, or mango puree for variations.
- No Oven Option: Steam in a covered pan for 20–25 minutes.
