1 cup buttermilk
1 cup cornstarch

½ cup mayonnaise
3 tablespoons sweet chili sauce
1–2 tablespoons sriracha (adjust to taste)
1 teaspoon honey (optional, for extra sweetness)

Place shrimp in a bowl with buttermilk. Let soak for 10–15 minutes to tenderize and help coating stick.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Taste and adjust spice level. Refrigerate until ready to use.
In a separate bowl, mix cornstarch, salt, pepper, and garlic powder.
Remove shrimp from buttermilk, letting excess drip off, then dredge in cornstarch mixture until fully coated.
Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
Fry shrimp in batches for 2–3 minutes, until golden and crispy.
Transfer to a paper towel-lined plate.
