Step 1: Cook the Filling
In a large skillet over medium heat, cook ground beef until browned. Drain excess fat. Add chopped onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 minute. Add beans, chili powder, cumin, paprika, salt, and pepper. Mix well and simmer for 3–5 minutes.
Step 2: Prepare Tortillas
Warm tortillas slightly to make them easier to roll. This helps prevent cracking.
Step 3: Assemble Enchiladas
Preheat oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Spoon beef and bean mixture into each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the dish.
Step 4: Add Sauce and Cheese
Pour remaining enchilada sauce evenly over the enchiladas. Top with the rest of the shredded cheese.
