Ingredients:
12 oz rotini pasta (or preferred short pasta)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup bell peppers, chopped
¼ cup red onion, finely sliced
½ cup black olives, sliced
½ cup feta cheese, crumbled
½ cup Italian vinaigrette (or creamy dressing)
Fresh herbs (parsley, basil)
Optional protein: grilled chicken, shrimp, or chickpeas
Instructions
Instructions:
Cook pasta until al dente, drain, and rinse under cold water.
Chop vegetables, herbs, and prepare optional protein.
Mix dressing ingredients in a bowl.
Combine pasta, vegetables, protein, and dressing in a large bowl.
Toss well, refrigerate for at least 1 hour, then serve chilled.
