Step 2: Prepare the Filling
In a medium bowl, combine cream cheese, ricotta, sugar, vanilla, and egg yolk (if using).
Mix until smooth and creamy.
Step 3: Cook the Blintzes
Heat a nonstick skillet over medium heat and lightly grease with butter.
Pour about ¼ cup of batter into the pan, swirling to make a thin pancake.
Cook 1–2 minutes per side, until lightly golden. Transfer to a plate and let cool slightly.
Step 4: Fill and Fold
Place 1–2 tablespoons of cheese filling in the center of each blintz.
Fold the edges over to enclose the filling into a rectangle or triangle shape.
