Description

  • 1 cup fresh or frozen blueberries

Step 2: Mix Ingredients
In a medium bowl, whisk eggs, cottage cheese, honey, and vanilla until smooth. In another bowl, combine almond flour (or oats), baking powder, and salt. Gradually fold dry ingredients into wet mixture. Gently fold in blueberries.

Step 3: Assemble and Bake
Pour mixture into prepared baking dish. Sprinkle optional topping if using. Bake for 35–40 minutes, until the top is lightly golden and a toothpick comes out mostly clean.

Step 4: Serve
Let cool slightly before slicing. Can be served warm or chilled and stored in the fridge for up to 4 days.
