Step 1: Brown the Butter
In a medium saucepan, melt butter over medium heat. Stir frequently until it turns golden brown and smells nutty (~5–7 minutes). Remove from heat and let cool slightly.
Step 2: Prepare the Dough
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk flour, baking soda, and salt.
In a large bowl, mix browned butter, brown sugar, and granulated sugar until smooth. Beat in eggs one at a time, then add vanilla.
Gradually fold in dry ingredients until just combined. Stir in chocolate chips (and optional toffee or nuts).
Step 3: Bake Cookies
Scoop dough (about 2 tablespoons each) onto prepared baking sheets, spacing 2 inches apart.
Bake 10–12 minutes, until edges are lightly golden and centers are soft. Do not overbake for chewy cookies.
Let cool 5 minutes on the sheet, then transfer to a wire rack to cool completely.
