Step 1: Brown the Butter

In a saucepan over medium heat, melt the butter. Continue cooking, stirring often, until it foams and turns golden brown with a nutty aroma (about 5–7 minutes). Remove from heat and let cool slightly.

Step 2: Make the Dough

In a large bowl, whisk browned butter with granulated sugar and brown sugar until smooth.
Add egg, egg yolk, and vanilla; whisk until glossy and well combined.

In a separate bowl, mix flour, cornmeal, baking soda, and salt. Gradually fold dry ingredients into the wet mixture until just combined.

Cover and chill the dough for 30 minutes for thicker cookies.

Step 3: Shape Cookies

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

If using lime sugar, rub lime zest into coarse sugar. Scoop dough into balls (about 2 tablespoons each) and roll in sugar if desired. Place cookies 2–3 inches apart.
