For the Brown Sugar Pineapple Sauce:
1 cup pineapple chunks (fresh or canned, drained)
¾ cup pineapple juice (reserved from can or fresh)
½ cup brown sugar (light or dark)
¼ cup low-sodium soy sauce
3 cloves garlic, minced
1 teaspoon fresh grated ginger (optional)
1 tablespoon cornstarch
2 tablespoons water (to mix with cornstarch)

Pat chicken dry. Season both sides with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken 4–5 minutes per side until golden brown. Remove and set aside (it will finish cooking in the sauce).
In the same skillet, add pineapple chunks, pineapple juice, brown sugar, soy sauce, garlic, and ginger.
Bring to a gentle simmer.
Mix cornstarch with water to create a slurry. Stir into the sauce and simmer until thickened (2–3 minutes).
Return chicken to the skillet. Spoon sauce over the top.
Cover and simmer on medium-low for 10–15 minutes, or until chicken reaches 165°F (74°C).
Sprinkle with green onions and sesame seeds.
Serve over rice, quinoa, or steamed vegetables.
