2 large egg whites

½ cup mini chocolate chips or M&M’s

Step 1: Preheat Oven
Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Make Batter
In a bowl, whisk together sugar, flour, cocoa powder, and salt.
Add egg whites, oil (or butter), and vanilla extract. Mix until smooth and glossy.
Step 3: Spread Thin
Pour batter onto the prepared baking sheet.
Using a spatula, spread it as thin as possible into an even layer (this is key for crispiness).
Sprinkle chocolate chips, M&M’s, or caramel bits if using.
Step 4: Bake
Bake for 18–22 minutes until the edges are crisp and the center is set.
Remove from oven and let cool completely on the pan.
Step 5: Break into Pieces
Once fully cooled, break into irregular brittle pieces.
Sprinkle flaky sea salt if making salted caramel version.
