Heat olive oil in a pan over medium heat.
Sauté garlic until fragrant, ~30 seconds.
Add chopped shrimp, paprika, salt, and pepper. Cook until shrimp turn pink, 2–3 minutes.
Remove from heat, stir in cream cheese (if using) and parsley. Let cool slightly.
Step 2: Assemble Croissants
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Unroll croissant dough. Place a spoonful of shrimp mixture on the wider end of each triangle.
Roll dough over the shrimp, tucking ends underneath.
Brush tops with melted butter.
