Description

For the Dough:

  • 1 ½ cups warm water (110°F / 45°C)

  • 1 packet (2 ¼ tsp) active dry yeast

  • 1 tbsp granulated sugar

  • 4 cups all-purpose flour

  • 1 tsp salt

  • 2 tbsp unsalted butter, melted

For Boiling:

  • 10 cups water

  • 2/3 cup baking soda

For Topping:

  • 4 tbsp unsalted butter, melted

  • Coarse salt, for sprinkling

Step 1: Prepare the Dough

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit 5 minutes until foamy.

  2. In a large bowl, mix flour and salt. Add melted butter and yeast mixture.

  3. Knead dough for 5–7 minutes until smooth and elastic. Cover and let rise for 1 hour, until doubled in size.

Step 2: Shape the Pretzel Bites

  1. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.

  2. Divide dough into 24 equal pieces. Roll each into a small rope and cut into bite-sized pieces (~1–1.5 inches).

Step 3: Boil Pretzel Bites

  1. In a large pot, bring 10 cups water and baking soda to a boil.

  2. Drop pretzel bites in batches, boiling for 30 seconds each. Remove with a slotted spoon and place on baking sheet.

Step 4: Bake

  1. Brush boiled pretzel bites with melted butter and sprinkle lightly with coarse salt.

  2. Bake 12–15 minutes until golden brown. Brush again with butter when hot from the oven for extra richness.
