Instructions
Preheat oven to 350°F (175°C).
Line a 9×13-inch baking dish with parchment.
Mix graham crumbs, melted butter, sugar, and cinnamon.
Press firmly into the dish and bake for 8–10 minutes. Let cool slightly.
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then vanilla.
Pour evenly over the cooled crust.
In a skillet, melt butter over medium heat.
Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.
Cook 5–7 minutes until soft and caramelized.
Spread over the cheesecake layer.
Mix flour, oats, brown sugar, and cinnamon.
Cut in cold butter until crumbly.
Sprinkle evenly over the apples.
Bake 30–35 minutes, until the center is set.
Cool completely, then refrigerate at least 2 hours for clean slices.
Cut into bars and drizzle generously with caramel sauce.
