Step 1: Prepare Batter

In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a large bowl, mix mashed bananas, grated carrots, oil, and sugar until well combined. Beat in eggs one at a time, then add vanilla.
Gradually fold the dry ingredients into the wet mixture until just combined. Stir in optional add-ins if using.
Step 2: Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Step 3: Prepare Glaze (Optional)
