Description

2 tablespoons all-purpose flour
2 cups milk (whole milk preferred)
1 teaspoon Dijon mustard (optional but recommended)
½ teaspoon garlic powder or 1 minced garlic clove
1 cup sharp cheddar cheese, grated
¼ cup parmesan cheese, grated
Salt and black pepper to taste

For the Topping:

½ cup grated cheddar cheese
2 tablespoons breadcrumbs (optional for a crispy topping)
1 tablespoon chopped parsley (optional)

Step 1: Prepare the Cauliflower

Bring a large pot of salted water to a boil.
Add cauliflower florets and cook for about 4–5 minutes, until just tender.
Drain well and set aside.

Step 2: Make the Cheese Sauce

In a saucepan over medium heat, melt the butter.
Add flour and whisk continuously for 1–2 minutes to form a roux.
Gradually pour in the milk while whisking to avoid lumps.
Cook until the sauce thickens (about 3–4 minutes).

Step 3: Add Cheese

Stir in the cheddar cheese, parmesan, mustard, and garlic.
Season with salt and black pepper.
Mix until the cheese melts and the sauce becomes smooth and creamy.

Step 4: Assemble the Dish

Preheat the oven to 375°F (190°C).
Place the cooked cauliflower in a baking dish.
Pour the cheese sauce evenly over the cauliflower.

Step 5: Add Topping

Sprinkle extra cheddar and breadcrumbs over the top.

Step 6: Bake

Bake for 20–25 minutes until the top is golden and bubbling.

Step 7: Serve

 

Remove from the oven, garnish with chopped parsley, and serve warm.
