2 cups shredded sharp cheddar cheese
½ cup shredded mozzarella cheese
½ teaspoon garlic powder

1 cup cooked shredded chicken

Step 1: Cook the Cauliflower
Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 6–8 minutes until tender but not mushy. Drain well and set aside.
Step 2: Make the Cheese Sauce
In a medium saucepan, melt 2 tablespoons butter over medium heat. Add flour and whisk continuously for about 1 minute to form a roux.
Slowly pour in milk or heavy cream while whisking to prevent lumps. Cook for 3–4 minutes until the sauce thickens.
Step 3: Add Cheese and Seasoning
Reduce heat to low. Stir in cheddar and mozzarella cheese until melted and smooth. Add garlic powder, onion powder, salt, and black pepper.
Step 4: Combine
Add the cooked cauliflower to the cheese sauce and gently stir until fully coated.
If using pasta or chicken, mix it in at this stage.
Step 5: Optional Baked Version
Transfer the mixture to a baking dish. Sprinkle parmesan and breadcrumbs on top. Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.
Serve warm.
