Step 1: Prepare Onion Rings
Peel onions and slice into 1–1.5 inch thick rings. Separate carefully.
Set aside the smaller inner rings for stuffing; reserve larger rings for the exterior.
Step 2: Make Mac and Cheese Filling
In a saucepan, melt butter, add cream cheese, cheddar, mozzarella, and milk. Stir until creamy.
Fold in cooked macaroni and season with salt & pepper. Let cool slightly.
Step 3: Stuff Onion Rings
