  • 8 oz (225 g) mushrooms, sliced

  • 2 tablespoons all-purpose flour

  • 1 cup (240 ml) chicken stock

  • ½ cup (120 ml) heavy cream or double cream

  • 2 cups cooked chicken, shredded or diced

  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

  • Salt and pepper to taste

For the Pie:

  • 1 sheet ready-made puff pastry (or homemade, about 89 inches)

  • 1 egg, beaten (for egg wash)

Step 1: Prepare the Filling

  1. Melt butter in a large skillet over medium heat.

  2. Sauté onions until soft and translucent, 3–4 minutes.

  3. Add garlic and mushrooms; cook until mushrooms release moisture and soften, about 5–6 minutes.

  4. Stir in flour and cook 1–2 minutes to remove raw taste.

  5. Gradually pour in chicken stock, stirring continuously until thickened.

  6. Stir in cream and thyme, season with salt and pepper.

  7. Add cooked chicken and mix well. Remove from heat and let cool slightly.

Step 2: Assemble the Pie

  1. Preheat oven to 400°F (200°C).

  2. Pour filling into a lightly greased 9-inch pie dish.

  3. Cover with puff pastry, trimming edges and pressing to seal.

  4. Brush the top with beaten egg and cut a few slits for steam.

Step 3: Bake

  1. Bake in preheated oven for 25–30 minutes or until pastry is golden brown and puffed.
