Ingredients
1 lb (16 oz) eggless pasta (rotini, penne, or shells)
2–3 cups cooked and diced chicken breast or thighs
2 stalks celery, finely chopped
1 small red onion, diced
1 medium red bell pepper, diced
2 cups halved cherry tomatoes
1 cup mayonnaise or ½ cup full-fat Greek yogurt
1 tbsp apple cider vinegar
1 tsp dried herbs (e.g., oregano, basil) or 2 tbsp fresh
Salt and pepper to taste

Instructions
1. Cook pasta according to package instructions (typically 10-12 minutes), rinse with cold water, and set aside to cool.
2. Dice cooked chicken into ½-inch cubes. Finely chop celery, onions, and bell pepper.
3. In a separate bowl, whisk mayonnaise (or Greek yogurt) with apple cider vinegar, herbs, salt, and pepper.
4. Combine cooled pasta, chicken, and chopped vegetables in a large mixing bowl.
5. Add dressing and gently toss until evenly coated.
6. Refrigerate for at least 30 minutes to let flavors meld. Best when chilled 8 hours or overnight before serving.
7. Top with optional pine nuts or halal turkey bacon before serving.
