½ cup mini chocolate chips

Chopped pistachios or hazelnuts

In a medium bowl, mix drained ricotta, powdered sugar, cocoa powder, vanilla extract, and cinnamon until smooth and creamy.
Fold in mini chocolate chips. Refrigerate for 20–30 minutes to firm up.
Lay out pizzelle cookies on a flat surface.
Spread or pipe about 2 tablespoons of chocolate cannoli filling onto the flat side of one pizzelle.
Top with another pizzelle to create a sandwich. Press gently.
Dust with powdered sugar, drizzle with melted chocolate, or roll edges in chopped nuts if desired.
