Step 1: Make the Mint Filling
In a medium bowl, mix powdered sugar and softened butter until smooth.
Add peppermint extract and milk, 1 tablespoon at a time, until the mixture forms a pliable dough.
Shape into small patties (about 1-inch thick) and place on a parchment-lined baking sheet. Chill in the fridge for 15–20 minutes to firm up.
Step 2: Prepare the Chocolate Coating
Melt chocolate and coconut oil together in a heatproof bowl over simmering water (or microwave in 30-second intervals, stirring between).
Dip each chilled mint patty into the melted chocolate, fully coating it.
Place coated patties back on parchment paper. Let chocolate set at room temperature or chill briefly in the fridge.
Step 3: Serve & Store
