Step 1: Prepare Macaron Shells
Sift almond flour and powdered sugar together to remove lumps.
In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and continue to beat until stiff peaks form.
Add green food coloring to the meringue.
Gently fold in the almond flour mixture using a spatula until the batter flows like lava.
Step 2: Pipe Christmas Tree Shapes
Transfer batter to a piping bag fitted with a small round or star tip.
Use a Christmas tree macaron template on parchment paper to pipe tree shapes.
Tap the baking sheet lightly on the counter to remove air bubbles.
Step 3: Rest & Bake
Let macarons rest at room temperature for 30–60 minutes until a skin forms.
Preheat oven to 300°F (150°C).
Bake for 15–18 minutes, rotating halfway, until shells are set and have “feet.” Cool completely.
Step 4: Prepare Filling
Beat butter until smooth. Gradually add powdered sugar.
Add cream and vanilla (or flavoring) until fluffy. Adjust consistency as needed.
Step 5: Assemble Macarons
Pair shells of similar size.
Pipe a small amount of filling onto one shell and sandwich with the other.
Decorate tops with sprinkles, mini stars, or edible glitter to resemble Christmas decorations.
