Step 1: Prepare the Crust
Preheat oven to 350°F (175°C).
In a medium bowl, mix graham cracker crumbs (or crushed churros) with sugar, cinnamon, and melted butter until combined.
Press mixture firmly into the bottom of a 9-inch springform pan. Bake 8–10 minutes, then cool.

Step 2: Make the Cheesecake Filling
In a large bowl, beat cream cheese until smooth. Add sugar and continue beating.
Mix in eggs one at a time, then add vanilla, sour cream, and flour. Beat until smooth and creamy.
Pour filling over cooled crust and smooth the top.

Step 3: Bake the Cheesecake
Bake in preheated oven for 50–60 minutes, or until the edges are set but the center slightly jiggles.
Turn off oven, leave cheesecake inside for 10 minutes, then remove and cool completely at room temperature. Chill for at least 4 hours or overnight.

Step 4: Add Churro Topping
Mix cinnamon and sugar, then sprinkle over chopped mini churros or homemade churro pieces.
