  4. Roll out dough and fit into a 9-inch pie pan. Prick bottom with a fork.

  5. Bake blind (with pie weights or beans) for 10–12 minutes. Remove weights and bake 3–5 minutes more until lightly golden. Cool slightly.

Step 2: Make the Custard Filling

  1. In a medium saucepan, heat milk over medium heat until warm (not boiling).

  2. In a bowl, whisk eggs, sugar, cornstarch/custard powder, vanilla, cinnamon, and salt until smooth.

  3. Slowly pour warm milk into egg mixture while whisking constantly.

  4. Return mixture to saucepan and cook over low heat, stirring constantly, until thickened (about 5–7 minutes).

Step 3: Assemble and Bake

  1. Pour custard into pre-baked pie crust.

  2. Bake at 350°F (175°C) for 20–25 minutes, or until custard is set but slightly jiggly in the center.

  3. Let cool completely at room temperature, then chill in the fridge for at least 2 hours.
