4 large eggs

1 cup whole milk
1 cup shredded sweetened coconut
For the Frosting:
16 oz (2 packages) cream cheese or buttercream frosting, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk to adjust consistency
½ cup shredded coconut for frosting
For Decoration:
Additional shredded coconut for topping
Optional: toasted coconut for a nutty flavor and golden color

Step 1: Bake Cake
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round pan.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.
Gradually mix in dry ingredients alternately with milk until smooth. Fold in shredded coconut.
Pour batter into the prepared pan and bake 35–40 minutes, until a toothpick comes out clean. Cool completely.
Step 2: Prepare Frosting
In a medium bowl, beat frosting with powdered sugar, vanilla, and milk until smooth. Fold in ½ cup shredded coconut.
Step 3: Frost Cake
Level the cooled cake. Apply a thin crumb coat and chill 20 minutes.
Frost the cake fully with coconut frosting and smooth. Sprinkle additional shredded coconut on top.
Step 4: Optional Decoration
Toast some coconut in a skillet over medium heat for 5 minutes until golden, then sprinkle on top for extra flavor and texture.
