Step 1: Prep
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together cake flour, baking soda, and salt. Set aside.
Step 3: Cream Butter & Sugars
In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
Step 4: Combine
Gradually mix dry ingredients into the butter mixture until smooth. Fold in crushed coffee beans and chocolate chips (if using).
Step 5: Shape & Bake
Scoop dough into 1–2 tbsp portions and place 2 inches apart on prepared baking sheets. Bake 10–12 minutes or until edges are lightly golden. Cool on a wire rack.
