Step 1: Prepare the Crust
Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
In a medium bowl, mix cornflakes, melted butter, brown sugar, and caramel (if using) until well coated. Press evenly into the bottom of the prepared pan.
Step 2: Make Brownie Batter
In a medium saucepan, melt butter over low heat. Remove from heat, stir in sugar until smooth. Beat in eggs one at a time, then add vanilla.
In a separate bowl, whisk flour, cocoa powder, salt, and baking powder. Gradually fold into wet ingredients until smooth.
Step 3: Assemble & Bake
Pour brownie batter over the cornflake crust and smooth the top.
Bake 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (do not overbake).
Step 4: Cool & Serve
Cool completely in the pan before cutting into squares or bars. Drizzle with extra caramel or sprinkle with chocolate chunks if desired.
