6 large eggs
1 cup cottage cheese (full-fat or low-fat)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder (optional)

Add-Ins (Choose Your Favorite):

½ cup shredded cheddar or mozzarella cheese
½ cup chopped spinach
½ cup diced bell peppers
¼ cup chopped onions
¼ cup cooked, crumbled turkey sausage or bacon (optional)

Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone muffin molds for easy removal.

Step 2: Blend
In a blender, combine eggs, cottage cheese, salt, pepper, and garlic powder. Blend until completely smooth and creamy.

Step 3: Add Fillings
Evenly distribute spinach, veggies, and/or cheese into each muffin cup. Pour the blended egg mixture over the fillings, filling each about ¾ full.

Step 4: Bake
Bake for 20–25 minutes, or until the egg bites are set in the center and lightly golden on top.

 

Step 5: Cool & Serve
Let cool for 5 minutes before removing from the pan. Serve warm or store for meal prep.

Notes

Blender Method: Blending ensures smooth, fluffy egg bites similar to sous vide style.
Microwave Option: Pour mixture into a greased microwave-safe silicone mold and cook 60–90 seconds, checking for doneness.
Storage: Refrigerate up to 4 days or freeze up to 2 months.
Without Cottage Cheese: Substitute with Greek yogurt or ricotta, though texture may vary slightly.
