12 oz fettuccine or elbow pasta
1 tablespoon salt (for pasta water)
For the Crawfish Monica Sauce:
1 lb cooked crawfish tails
4 tablespoons unsalted butter
2 cloves garlic, minced
½ cup dry white wine
1 cup heavy cream
½ teaspoon Creole seasoning (adjust to taste)
¼ teaspoon cayenne pepper (optional, for heat)
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Step 1: Cook Pasta
Bring a large pot of salted water to a boil.
Cook pasta according to package directions until al dente.
Drain and set aside, reserving ½ cup pasta water.
Step 2: Prepare the Sauce
In a large skillet, melt butter over medium heat.
Add garlic and sauté until fragrant, about 1 minute.
Stir in crawfish tails and cook for 2–3 minutes.
Pour in white wine and simmer 2–3 minutes until slightly reduced.
Lower heat and stir in heavy cream, Creole seasoning, and cayenne (if using).
Simmer gently until sauce thickens, about 3–5 minutes.
Step 3: Combine Pasta and Sauce
Add cooked pasta to the skillet, tossing to coat evenly.
Add reserved pasta water a little at a time if sauce needs thinning.
Stir in Parmesan cheese and chopped parsley.
Step 4: Serve
Plate pasta and garnish with extra Parmesan, parsley, and optional lemon wedges.
Serve immediately while warm.
