Slice cucumbers thinly. Lightly salt and let sit for 10 minutes, then pat dry to remove excess moisture.
Step 3: Make the Dressing
In a bowl, whisk mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, garlic, salt, and pepper until smooth and creamy.
Step 4: Assemble the Salad
In a large bowl, combine shrimp, cucumbers, red onion, and fresh dill. Pour dressing over and gently toss until evenly coated.
