  • 2 large cucumbers, thinly sliced

  • ¼ small red onion, thinly sliced (optional)

  • 1 tablespoon fresh dill, chopped (or parsley)

For the Creamy Dressing:

  • ½ cup mayonnaise (or Greek yogurt for a lighter version)

  • 1 tablespoon lemon juice or apple cider vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and black pepper, to taste

Optional Add-Ins:

  • Cherry tomatoes, halved

  • Avocado slices

  • Paprika or Old Bay seasoning

Step 1: Prep the Shrimp
If not already cooked, boil shrimp in lightly salted water for 2–3 minutes until pink. Drain and chill completely.

Step 2: Prepare the Cucumbers
Slice cucumbers thinly. Lightly salt and let sit for 10 minutes, then pat dry to remove excess moisture.

Step 3: Make the Dressing
In a bowl, whisk mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, garlic, salt, and pepper until smooth and creamy.

Step 4: Assemble the Salad
In a large bowl, combine shrimp, cucumbers, red onion, and fresh dill. Pour dressing over and gently toss until evenly coated.

 

Step 5: Chill & Serve
Refrigerate for 20–30 minutes before serving for best flavor. Serve cold.
