  • 1 cup dried brown or green lentils, rinsed

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 1 (28 oz) can diced tomatoes

  • 1 (15 oz) can tomato sauce

  • 1 cup beef or vegetable broth

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • ½ teaspoon smoked paprika (optional)

  • Salt and pepper, to taste

  • 1 bell pepper, diced (optional)

For Garnish (optional):

  • Chopped fresh cilantro

  • Shredded cheese

  • Sour cream or Greek yogurt

  • Sliced jalapeños

Instructions

📝 Instructions:

Step 1: Brown the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Step 2: Prep Slow Cooker

Step 3: Cook the Chili
Cover and cook on low for 6–8 hours or high for 3–4 hours, until lentils are tender and chili is thickened.

Step 4: Add Vegetables (Optional)
Stir in corn and bell peppers 30 minutes before serving, if using, to keep them slightly crisp.

Step 5: Serve & Garnish
Spoon chili into bowls and top with your favorite garnishes such as shredded cheese, cilantro, sour cream, or jalapeños.
