½ cup soy sauce
½ cup honey

¼ teaspoon crushed red pepper flakes (optional for heat)

1–2 teaspoons cornstarch

Step 1: Prepare the Sauce
In a small bowl, whisk together soy sauce, honey, minced garlic, vinegar, sesame oil, ginger, and red pepper flakes.
Step 2: Add Chicken to Crockpot
Place chicken thighs in the slow cooker. Pour sauce over chicken, making sure each piece is coated.
Step 3: Cook
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender and fully cooked.
Step 4: Optional Thickening
If you prefer a thicker, stickier sauce, remove ½ cup of the cooking liquid, mix with cornstarch, then stir back into the crockpot. Cook an additional 10–15 minutes on HIGH until sauce thickens.
