Step 1: Prepare Cheesecake Filling
In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.
Refrigerate while preparing cookies.
Step 2: Make Cookie Dough
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy.
Beat in eggs and vanilla.
Gradually mix in flour, baking soda, and salt until a soft dough forms.
Step 3: Assemble Cookies
Scoop a tablespoon of cookie dough and flatten slightly in your palm.
Place a teaspoon of cheesecake filling in the center.
Cover with another small scoop of cookie dough and seal edges, forming a ball.
Place on prepared baking sheet about 2 inches apart.
Step 4: Bake
Bake for 12–14 minutes or until edges are lightly golden.
Remove from oven and let cool for 5 minutes.
Step 5: Add Caramel Topping
Drizzle each cookie with caramel sauce and sprinkle lightly with sea salt.
