1 ½ teaspoons salt
1 teaspoon instant yeast
1 tablespoon sugar (optional, balances tartness)

Instructions
📝 Instructions:
Mix Dough:
In a large bowl, combine flour, salt, yeast, and sugar.
Stir in warm water until a sticky, shaggy dough forms.
Fold in cranberries, nuts, and honey (if using) until evenly distributed.
First Rise:
Cover bowl with plastic wrap or a clean kitchen towel. Let dough rise at room temperature for 8–12 hours until bubbly and roughly doubled in size.
Shape Loaf:
Lightly flour your hands and a work surface. Gently shape dough into a round or oval loaf, preserving air bubbles.
Place loaf on parchment paper for easy transfer.
Second Rise:
Cover loosely and let rise 30–60 minutes.
Preheat Oven:
Preheat oven to 450°F (230°C) with a Dutch oven or heavy oven-safe pot inside.
Bake:
Transfer dough (on parchment) into the preheated pot.
Cover and bake 30 minutes. Remove lid and bake another 15–20 minutes until golden brown and crusty.
Cool & Serve:
Let bread cool on a wire rack at least 1 hour before slicing to set the crumb.
