  • 1 tablespoon lemon juice

  • 1 teaspoon olive oil

  • ½ teaspoon dried dill

  • Salt and pepper, to taste

Instructions

📝 Instructions:

Step 1: Prep Ingredients
Wash and slice cucumbers and tomatoes. Thinly slice red onion and chop fresh herbs.

Step 2: Make the Dressing

  • Creamy: Mix Greek yogurt, lemon juice, olive oil, dill, salt, and pepper until smooth.

Step 3: Assemble the Salad
In a large bowl, combine cucumbers, tomatoes, red onion, and olives (if using). Pour the dressing over the salad and toss gently.

Sprinkle crumbled feta and fresh herbs on top. Toss lightly again or leave as a garnish.

Step 5: Serve

Notes

  • Crunch Factor: For extra crunch, add toasted pine nuts or sunflower seeds.
  • Make Ahead: Salad can be prepped ahead; add feta just before serving to keep it firm.
  • Variations:
  • Greek Style: Add olives and cucumber ribbons.
  • Balsamic Twist: Use balsamic vinegar instead of red wine vinegar.
  • Creamy Version: Use the yogurt-based dressing instead of vinaigrette.
