200g dark chocolate (70% cocoa, gluten-free)
100ml heavy cream or coconut cream for dairy-free version
1 teaspoon vanilla extract (optional)
Pinch of salt

Unsweetened cocoa powder
Chopped nuts (almonds, hazelnuts, pistachios)
Desiccated coconut
Melted dark chocolate for drizzle
Instructions

Step 1: Melt Chocolate
Chop dark chocolate into small pieces. Place in a heatproof bowl.
Heat cream in a small saucepan until just simmering, then pour over chocolate. Let sit for 1–2 minutes, then stir until smooth and glossy. Add vanilla extract and salt.
Step 2: Chill the Mixture
Cover the chocolate mixture and refrigerate for 1–2 hours, until firm enough to scoop.
Step 3: Shape the Truffles
Use a teaspoon or small cookie scoop to portion chocolate. Roll quickly between your palms to form smooth balls.
Step 4: Coat / Decorate
Roll truffles in cocoa powder, chopped nuts, or coconut, or drizzle with melted chocolate for an elegant finish.
Step 5: Store
Keep in an airtight container in the refrigerator for up to 2 weeks. Bring to room temperature before serving for the perfect texture.
Notes
Dairy-Free Version: Use coconut cream instead of heavy cream for a luscious vegan alternative.
Quick Tip: Chill your hands or lightly dust with cocoa powder to prevent sticking while rolling.
