For the Shrimp:

  • 1 lb (450 g) large shrimp, peeled and deveined

  • ½ cup all-purpose flour

  • ½ cup cornstarch

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 large eggs, beaten

  • Oil for frying (vegetable or canola)

For the Dynamite Sauce:

  • ½ cup mayonnaise

  • 23 tablespoons sriracha (adjust to taste)

  • 1 tablespoon honey

  • 1 teaspoon rice vinegar or lemon juice

  • ½ teaspoon garlic powder

Optional Garnishes:

  • Chopped green onions

  • Sesame seeds

  • Lime wedges

Step 1: Prepare the Shrimp

  1. Pat shrimp dry with paper towels.

  2. In a shallow bowl, mix flour, cornstarch, salt, and pepper.

  3. Dip each shrimp into the beaten eggs, then coat with the flour mixture. Set aside.

Step 2: Fry the Shrimp

  1. Heat oil in a deep skillet or pot to 350°F (175°C).

  2. Fry shrimp in batches for 2–3 minutes or until golden and crispy.

  3. Drain on paper towels.

Step 3: Make the Dynamite Sauce

  1. In a small bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, and garlic powder until smooth.

  2. Adjust spice and sweetness to taste.

Step 4: Toss & Serve

  1. Place fried shrimp in a large bowl. Pour sauce over shrimp and toss gently until evenly coated.

  2. Garnish with chopped green onions, sesame seeds, and a squeeze of lime if desired.

  3. Serve immediately on its own, over rice bowls, in tacos, or with lettuce for a salad.
