For the Shrimp:
1 lb (450 g) large shrimp, peeled and deveined
½ cup all-purpose flour
½ cup cornstarch
½ teaspoon salt
½ teaspoon black pepper
2 large eggs, beaten
Oil for frying (vegetable or canola)
For the Dynamite Sauce:
½ cup mayonnaise
2–3 tablespoons sriracha (adjust to taste)
1 tablespoon honey
1 teaspoon rice vinegar or lemon juice
½ teaspoon garlic powder
Optional Garnishes:
Chopped green onions
Sesame seeds
Lime wedges

Step 1: Prepare the Shrimp
Pat shrimp dry with paper towels.
In a shallow bowl, mix flour, cornstarch, salt, and pepper.
Dip each shrimp into the beaten eggs, then coat with the flour mixture. Set aside.
Step 2: Fry the Shrimp
Heat oil in a deep skillet or pot to 350°F (175°C).
Fry shrimp in batches for 2–3 minutes or until golden and crispy.
Drain on paper towels.
Step 3: Make the Dynamite Sauce
In a small bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, and garlic powder until smooth.
Adjust spice and sweetness to taste.
Step 4: Toss & Serve
Place fried shrimp in a large bowl. Pour sauce over shrimp and toss gently until evenly coated.
Garnish with chopped green onions, sesame seeds, and a squeeze of lime if desired.
Serve immediately on its own, over rice bowls, in tacos, or with lettuce for a salad.

- Crispier Shrimp: Use a mix of cornstarch and flour for extra crunch.
