Ingredients

Scale

🛒 Ingredients (serves 6–8):

For the Soup:

  • 1 lb ground beef

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 4 cups beef or chicken broth

  • 1 teaspoon Italian seasoning

  • 8 oz broken lasagna noodles

  • Salt and pepper, to taste

For Serving:

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • Fresh basil or parsley for garnish

Instructions

📝 Instructions:

Step 1: Cook the Meat
In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat. Add diced onion and garlic and sauté until softened.

Step 2: Add Liquids & Seasoning
Stir in crushed tomatoes, broth, and Italian seasoning. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 10–15 minutes.

Step 3: Cook the Noodles
Add broken lasagna noodles to the simmering soup. Cook until noodles are tender, about 10 minutes, stirring occasionally.

Step 4: Serve & Garnish
Ladle soup into bowls. Top with shredded mozzarella, Parmesan, and fresh basil or parsley. Serve hot with crusty bread if desired.

Notes

  • Make it Crockpot-Friendly: Brown meat and sauté onions first, then add all ingredients to a slow cooker and cook on low 4–6 hours.
  • Lazy Version: Skip pre-cooking the noodles; just let them simmer longer in the soup.
  • Make Ahead: Soup keeps well in the fridge for 3–4 days and freezes nicely for up to 2 months.
  • Vegetarian Option: Replace ground beef with sautéed mushrooms or lentils.
