Step 1: Cook the Meat
In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat. Add diced onion and garlic and sauté until softened.
Step 2: Add Liquids & Seasoning
Stir in crushed tomatoes, broth, and Italian seasoning. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 10–15 minutes.
Step 3: Cook the Noodles
Add broken lasagna noodles to the simmering soup. Cook until noodles are tender, about 10 minutes, stirring occasionally.
Step 4: Serve & Garnish
Ladle soup into bowls. Top with shredded mozzarella, Parmesan, and fresh basil or parsley. Serve hot with crusty bread if desired.
