Ingredients
🛒 Ingredients (serves 4):
For the Risotto:
1 ½ cups arborio rice
1 lb (450 g) mixed mushrooms, sliced
1 small onion, finely chopped
2 cloves garlic, minced
4 cups vegetable stock, kept warm
3 tablespoons olive oil
2 tablespoons butter
½ cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
1 teaspoon fresh thyme leaves (optional)
2 tablespoons chopped parsley for garnish
Optional:
¼ cup dry white wine (can be omitted)
Instructions
📝 Instructions:
Step 1: Prepare Mushrooms
Heat 1 tablespoon olive oil in a large pan over medium heat. Add mushrooms and sauté until golden brown, about 5–7 minutes. Remove mushrooms and set aside.
Step 2: Cook Aromatics
In the same pan, add remaining olive oil and butter. Sauté onion until soft, about 3 minutes. Add garlic and cook for 1 more minute.
Step 3: Toast Rice
Add arborio rice to the pan and stir for 1–2 minutes until slightly translucent around the edges. Optional: pour in wine and cook until mostly absorbed.
Step 4: Add Stock Gradually
Add warm vegetable stock ½ cup at a time, stirring frequently. Wait until most liquid is absorbed before adding more. Continue until rice is creamy and tender but still slightly al dente, about 18–20 minutes.
Step 5: Finish Risotto
Stir in sautéed mushrooms, Parmesan, and thyme (if using). Season with salt and pepper to taste. Remove from heat.
Step 6: Serve
Garnish with chopped parsley and an extra sprinkle of Parmesan. Serve immediately while creamy and warm.
Notes
- Stirring frequently helps release rice starch for a creamy texture.
- Use a mix of mushrooms like cremini, shiitake, and button for extra flavor.
- Make it vegan by replacing butter with olive oil and Parmesan with nutritional yeast.
- Risotto is best served immediately; it doesn’t reheat as well.
