  • 1 ½ cups arborio rice

  • 1 lb (450 g) mixed mushrooms, sliced

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable stock, kept warm

  • 3 tablespoons olive oil

  • 2 tablespoons butter

  • ½ cup grated Parmesan cheese

  • Salt and freshly ground black pepper, to taste

  • 1 teaspoon fresh thyme leaves (optional)

  • 2 tablespoons chopped parsley for garnish

  • ¼ cup dry white wine (can be omitted)

Step 1: Prepare Mushrooms
Heat 1 tablespoon olive oil in a large pan over medium heat. Add mushrooms and sauté until golden brown, about 5–7 minutes. Remove mushrooms and set aside.

Step 2: Cook Aromatics
In the same pan, add remaining olive oil and butter. Sauté onion until soft, about 3 minutes. Add garlic and cook for 1 more minute.

Step 3: Toast Rice
Add arborio rice to the pan and stir for 1–2 minutes until slightly translucent around the edges. Optional: pour in wine and cook until mostly absorbed.

Step 4: Add Stock Gradually
Add warm vegetable stock ½ cup at a time, stirring frequently. Wait until most liquid is absorbed before adding more. Continue until rice is creamy and tender but still slightly al dente, about 18–20 minutes.

Step 5: Finish Risotto
Stir in sautéed mushrooms, Parmesan, and thyme (if using). Season with salt and pepper to taste. Remove from heat.

Step 6: Serve
Garnish with chopped parsley and an extra sprinkle of Parmesan. Serve immediately while creamy and warm.

  • Stirring frequently helps release rice starch for a creamy texture.
  • Use a mix of mushrooms like cremini, shiitake, and button for extra flavor.
  • Make it vegan by replacing butter with olive oil and Parmesan with nutritional yeast.
