Description

Ful mudammas is a classic Egyptian dish made with slow-cooked fava beans seasoned with olive oil, garlic, lemon juice, and cumin. This hearty and nutritious meal is commonly eaten for breakfast across Egypt and the Middle East. It is usually served warm with pita bread, fresh vegetables, and optional toppings like boiled eggs, tomatoes, parsley, or tahini.

Ingredients

Scale

🛒 Ingredients (for about 4 servings):

For the Ful:

2 cups dried fava beans (or 2 cans cooked fava beans, drained)
4 cups water (if using dried beans)
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon ground cumin
½ teaspoon salt (or to taste)
½ teaspoon black pepper
2 tablespoons fresh lemon juice

Optional Toppings:

1 small tomato, diced
¼ cup fresh parsley, chopped
1 small red onion, finely chopped
2 tablespoons tahini
1 boiled egg per serving (optional)
Extra olive oil for drizzling
Warm pita bread for serving

Instructions

📝 Instructions:

Step 1: Prepare the Beans
If using dried fava beans, rinse them well and soak overnight in plenty of water. Drain and place them in a pot with fresh water. Simmer for 1½ to 2 hours until the beans are soft and tender. If using canned fava beans, simply rinse and drain them.

Step 2: Mash and Season
Place the cooked fava beans in a bowl or saucepan. Lightly mash them with a fork or potato masher, leaving some beans whole for texture.

Step 3: Add Flavor
Add olive oil, minced garlic, cumin, salt, black pepper, and lemon juice. Mix well and warm gently on the stove if needed.

Step 4: Serve
Transfer the ful to a serving bowl. Top with chopped tomatoes, parsley, onion, and a drizzle of olive oil. Add tahini or a boiled egg if desired. Serve warm with pita bread.
