Description

For the Dough:

  • 2 ½ cups all-purpose flour

  • 2 teaspoons instant yeast

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 1 cup warm water (110°F / 43°C)

  • 3 tablespoons olive oil

For the Garlic Topping:

  • 3 tablespoons olive oil

  • 3 cloves garlic, finely minced

  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

  • ½ teaspoon flaky sea salt

  • Optional: grated parmesan, cheese, or spring onions

Step 1: Prepare the Dough
In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
Add flour, salt, and olive oil. Mix until a sticky dough forms. Cover and let rise for 45–60 minutes, until doubled in size.

Step 2: Prepare Muffin Pan
Grease a 12-cup muffin tin generously with olive oil. Punch down the dough and divide evenly into muffin cups.

Step 3: Add Garlic Topping
In a small bowl, mix olive oil, garlic, and rosemary. Spoon over each muffin and gently press dimples into the dough with your fingers. Sprinkle with flaky salt and optional cheese.

Step 4: Bake
Preheat oven to 400°F (200°C). Bake for 18–22 minutes, or until golden brown and crisp on top.

Step 5: Cool & Serve
Let cool for 5 minutes, then remove from the pan. Serve warm for best flavor.
