2 tablespoons olive oil
3–4 garlic cloves, minced

2 cups canned crushed tomatoes or tomato sauce
2 tablespoons tomato paste
1 small onion, finely chopped
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon paprika (optional)
½ teaspoon chili flakes (optional)
1 teaspoon sugar (to balance acidity)
Salt and pepper, to taste
2 tablespoons olive oil
Optional garnish:
Fresh parsley or basil, chopped
Grated Parmesan cheese (optional)

Step 1: Prepare the Salmon
Season salmon fillets with salt and pepper. Heat olive oil in a pan over medium heat. Sear the salmon for 2–3 minutes per side until lightly golden. Remove and set aside (it will finish cooking in the sauce).
Step 2: Make the Tomato Sauce
In the same pan, add olive oil and sauté chopped onion until soft. Stir in garlic and cook for about 30 seconds until fragrant. Add tomato paste and cook for 1 minute.
Pour in crushed tomatoes, then add oregano, basil, paprika, chili flakes, sugar, salt, and pepper. Stir well and let simmer for 8–10 minutes until slightly thickened.
Step 3: Cook the Salmon in Sauce
Return the salmon to the pan, spoon sauce over the fillets, cover, and simmer for 8–12 minutes until the salmon is fully cooked and tender.
Step 4: Serve
Garnish with fresh parsley or basil. Serve hot with pasta, rice, or bread to soak up the delicious sauce.

- For oven baking: Transfer sauce and salmon to a baking dish and bake at 180°C (350°F) for 15–20 minutes.
