Step 1: Prepare Gelatin

  • Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes.

Step 2: Whip Cream & Spices

  • In a large bowl, whip heavy cream with sugar, ginger, cinnamon, nutmeg, cloves, espresso powder, and vanilla until soft peaks form.

Step 3: Combine Gelatin

  • Gently heat bloomed gelatin until melted. Fold into the whipped cream mixture until fully incorporated.

Step 4: Assemble Domes

  • Optional: Press cookie crumbs mixed with butter into silicone dome molds for a base.

  • Spoon or pipe the mousse over the base. Smooth the top and chill in the fridge for at least 4 hours or overnight until set.

Step 5: Chocolate Glaze (Optional)

  • Heat cream and pour over chopped chocolate. Stir until smooth.

  • Pour or drizzle over chilled domes before serving.
