For the Gingerbread Mousse:
1 cup heavy cream
2 tablespoons sugar
½ teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1 tablespoon powdered gelatin
2 tablespoons cold water
For the Biscuit Base (optional):
½ cup crushed gingerbread cookies or graham crackers
2 tablespoons melted butter
For the Chocolate Glaze (optional):
½ cup semi-sweet chocolate, chopped
3 tablespoons heavy cream

Step 1: Prepare Gelatin
Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes.
Step 2: Whip Cream & Spices
In a large bowl, whip heavy cream with sugar, ginger, cinnamon, nutmeg, cloves, espresso powder, and vanilla until soft peaks form.
Step 3: Combine Gelatin
Gently heat bloomed gelatin until melted. Fold into the whipped cream mixture until fully incorporated.
Step 4: Assemble Domes
Optional: Press cookie crumbs mixed with butter into silicone dome molds for a base.
Spoon or pipe the mousse over the base. Smooth the top and chill in the fridge for at least 4 hours or overnight until set.
Step 5: Chocolate Glaze (Optional)
Heat cream and pour over chopped chocolate. Stir until smooth.
Pour or drizzle over chilled domes before serving.
