A moist and flavorful banana bread made entirely gluten-free. Perfect for breakfast, snacks, or dessert. Can be made with almond flour, oil, or even a simple 4-ingredient version for a quick and healthy treat.

Ingredients

Scale

🛒 Ingredients (for one standard loaf pan):

For the Bread:

3 ripe bananas, mashed (~300g)
2 cups gluten-free flour (or almond flour for variation, ~240g)
1/2 cup sugar or honey (~100g, adjust to taste)
1/3 cup oil (coconut or vegetable, ~80ml)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: 1 teaspoon vanilla extract
Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

📝 Instructions:
Step 1: Prepare Batter
Preheat oven to 350°F (180°C). Grease a loaf pan or line with parchment paper.
Mash the bananas in a large bowl until smooth. Mix in sugar, oil, and vanilla extract.

Step 2: Combine Dry Ingredients
In a separate bowl, whisk gluten-free flour, baking powder, baking soda, and salt.

Step 3: Mix Wet and Dry
Fold dry ingredients into the banana mixture until just combined. Do not overmix. Add nuts or chocolate chips if desired.

Step 4: Bake
Pour batter into the prepared pan and bake 45–55 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

  • Moisture Tip: Use very ripe bananas and do not overbake to keep the bread soft.
  • Variations: Substitute almond flour for a nutty flavor or make a simple 4-ingredient version (bananas, gluten-free flour, sugar, and oil).
  • Make Ahead: Can be stored in an airtight container for 3–4 days or frozen for up to 2 months.
  • Serving Suggestion: Serve warm with nut butter, jam, or a drizzle of honey.
