Description

Step 1: Prepare Dough
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, and salt.
In a large bowl, cream butter and sugar until fluffy. Beat in egg, vanilla, and almond extract. Gradually mix in dry ingredients until a smooth dough forms.

Step 2: Shape Cookies
Roll dough out on a lightly floured surface to ~¼-inch thickness. Use cookie cutters to cut shapes. Place on prepared baking sheets, leaving 1–2 inches between cookies.

Step 3: Bake
