Step 1: Preheat & Prep
Preheat oven to 375°F (190°C). Line a baking tray with parchment paper or lightly grease a loaf pan.

Step 2: Mix Meatloaf
In a large bowl, soak breadcrumbs in milk for 5 minutes. Add ground meat, onions, garlic, eggs, parsley, thyme, salt, and pepper. Mix until just combined (do not overwork).

Step 3: Shape & Optional Bacon Wrap
Shape mixture into a loaf on the tray or in the pan. If using bacon, lay strips over the top, tucking edges underneath.

Step 4: Make Glaze
Mix ketchup, brown sugar, Worcestershire sauce, and Dijon mustard. Brush generously over the meatloaf.

Step 5: Bake
Bake 45–55 minutes, brushing with remaining glaze halfway through, until internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.
